Tiramisu truffles are an irresistible blend of ground ladyfinger cookies, creamy mascarpone cheese and a splash of coffee, rolled into cocoa powder. These taste just like Tiramisu cake, only in a bite-sized form.
In my house, I started a trend of no-bake sweet treats. In December only, or this Christmas, I prepared 3 types of no-bake truffles Cookies and cream cheese truffles, Speculaas truffles, and these delicious Tiramisu truffles. And I must confess I love making this as much as I love eating it.
These no-bake truffles are kind of dessert, where you take a few ingredients, mix them together, and pray that they taste good. And these not just taste good, these are fantastic. For me, the best part is, when you first bite the truffle, you taste that bitter cocoa powder, but how you continue to eat, you taste that perfect blend of sweet creamy mascarpone, ground ladyfinger cookies and a hint of coffee – bittersweet combination that really works. If you’re not into that combination, you can dip truffles into melted chocolate, instead of rolling into cocoa powder, but somehow they are more authentic with cocoa, because, still sprinkle Tiramisu with cocoa, not chocolate.
What you need: ladyfinger cookies, mascarpone cheese, powdered sugar, few tablespoons of strong brewed coffee and cocoa powder. Or instead of cocoa, melted chocolate for dipping.
In a food processor or with a ziplock and rolling pin finely ground ladyfingers. With a handheld mixer mix the mascarpone cheese until it is completely creamy, add sugar and coffee and mix thoroughly. Now mix in ground ladyfingers and with rubber spatula combine until incorporated. Try the mixture, add more sugar if it’s not sweet enough, or add more coffee if you want stronger coffee flavor. Cover the bowl with plastic foil and place in the refrigerator for around 1 hour. Take small pieces of mixture and form balls (mine were 2-2.5 cm -1 inch). Roll each ball into cocoa powder or dip into melted chocolate (melt the chocolate in the microwave in 15-second intervals or using a water bath). Store truffles in a sealed container in the refrigerator for up to 7 days.
