Layered Peach and Yoghurt Dessert in a Glass

Ingredients

Jelly:

  • 1 can 400 g; 16 oz of halved peaches
  • 8 sheets of gelatin 13 g

Yoghurt filling:

  • 1 pint 500 ml; 16 fl oz heavy whipping cream
  • 4 tbsp 60 g; 2.11 oz) gelatin powder
  • 4 tbsp water
  • 3 cups 800 ml; 27 fl oz plain yoghurt or plain greek yoghurt
  • 1 cup 130 g; 4.6 oz confectioners sugar

Instructions

Jelly:

  • In a small pot boil peaches and cook on low heat for about 5 minutes. After 5 minutes remove from heat and blend them in a blender. Add gelatin leaves and stir until the gelatin dissolves. Put aside.

Yoghurt filling:

  • Heat the water in a small pot and add gelatine, stir until dissolved. Mix yoghurt and sugar in a deeper bowl and add melted gelatin. Set aside and let it cool a while.
  • In a mean time, in a bowl of standing mixer whip heavy cream until soft peaks form ( do not over whip )
  • Stir yoghurt gelatin mixture into whipped cream. Mix until smooth.

Fill the glasses:

  • First put one layer of yogurt filling, then layer of jelly and finish with yogurt filling. Between every new layer put your glasses in a fridge for 5 minutes. Garnish with a fruit. Refrigerate at least 2 hours before serving.

Notes

***In Croatia, we are using grams and milliliter. My every recipe has a measuring in cups, grams (milliliter) and ounces. I own cups and spoons measure utensils and I try to be exact when I convert weight into cups, but there is a slight possibility of deviation from the exact amount. Due to differences in measurement, I recommend that you use a kitchen scale, if you have one.
