Baked Sea Bream in Aluminum Foil with Rosemary

Ingredients

  • 4 whole 10 oz each sea bass, cleaned and gutted (I used Adriatic Orata)
  • 3 sprigs fresh rosemary chopped ( or 1 tbsp dried rosemary)
  • 6 garlic cloves minced
  • 3 lemons sliced
  • 3 tbsp chopped parsley or 1 tbsp dried parsley
  • 1/2 cup 100 g; 3.5 oz butter
  • 3 tbsp extra virgin olive oil
  • salt and pepper to taste
  • Aluminium foil for baking

Instructions

  • Preheat oven to 400°F (200°C).
  • In a small saucepan melt the butter, add the olive oil, garlic, rosemary and parsley. Fry shortly for 30-60 seconds. Season with salt and pepper. Put aside.
  • Line large baking dish with aluminium foil, so that half the foil extends out of the baking pan, you need it to wrap your fish later.
  • On the bottom of baking dish, put few slices of lemon, season the fish inside and out with herbs and butter mixture, add few slices of lemon inside each fish, and lay the fish in baking pan over lemon slices.
  • Carefully wrap the foil, making sure the foil does not touch the fish.
  • Bake it for 20-25 minutes. Remove from the foil and serve with cooked (steamed) potatoes.
