Fresh Mint Ginger Lemonade

As the temperatures rise again to 38 degrees Celsius here, and more if you are in the sun, you need to hydrate, regardless of whether you drink water, juice, or this delicious lemonade.

Fresh Mint Ginger LemonadeMy family’s favorite summer drink is definitely lemonade. Whether store-bought or homemade. Of course, we prefer the one made at home, since it’s really simple and easy to make and tastes so much better than store-bought.

This spring I planted mint in the garden and now I have the whole “forest” of mint, that somehow I have to spend. And there was a big piece of ginger in the fridge and surfing the internet I got the idea for this recipe. Instead of making regular lemonade, I decided to change things up a bit.

Very tasty and refreshing. Definitely a win, win combination. This will be often found on our table this summer.

Fresh Mint Ginger Lemonade

Minty, gingery, oh-so-refreshing lemonade.

Ingredients

  • 1/2 cup chopped mint leaves
  • 1/3 cup chopped fresh ginger
  • 120 g sugar (1/2 cup, 4.2 oz)
  • 2 cups boiling water
  • 1/3 cup fresh lemon juice
  • 2 cups cold water or sparkling water
  • ice cubes
  • fresh mint leaves and lemon slices for garnish

Instructions

  • Combine chopped mint, ginger, and sugar in a medium bowl, add boiling water and allow to steep for 30-40 minutes.
  • Strain into a large pitcher, pressing on solids to extract liquid.
  • Pour lemon juice and around 2 cups water or sparkling water depending on taste.
  • Fill glasses with ice cubes, add lemonade and garnish with mint leaves and fresh lemon slices.
  • You can also spike this with some vodka.
