Cookie dough cheesecake bars

A combination of delicious chocolate chip cookie dough base with a creamy dreamy cheesecake filling. Perfection!


My love for chocolate chip cookies is not a secret to anyone from my household. So it is not a wonder that the scent of freshly baked cookies is often spreading throughout our house, which reminds me I have to publish chocolate chip cookie recipe too. Which is, I have to admit, quite difficult for me, because I can not resist freshly baked warm cookies, so photographing those treats would be complete torture, I just do not have enough power to resist eating a whole batch… neither my husband can resist them, so when the two of us unite, cookies don’t have a chance :).

The sweet treat is a combination of two of my favorite desserts, chocolate chip cookie, and cheesecake. A combination of delicious chocolate chip cookie dough base with a creamy dreamy cheesecake filling. Perfection!

Cookie dough cheesecake bars

A combination of delicious chocolate chip cookie dough base with a creamy dreamy cheesecake filling. Perfection!

Ingredients

Chocolate chip cookie dough:

  • 200 grams butter (7 oz 7/8 cups) room temperature
  • 50 grams granulated sugar (1.7 oz;1/4 cup)
  • 150 grams brown sugar (5.3 oz; 3/4 cup)
  • 1 egg room temperature
  • 250 grams all-purpose flour (2 cups; 8.8oz)
  • 1 teaspoon baking soda
  • 1 teaspoons vanilla extract
  • 200 grams dark chocolate (7oz) or chocolate chips or chocolate chunks, divided
  • pinch of salt

For cheesecake:

  • 250 grams cream cheese (8.8oz) room temperature
  • 200 grams creme fraiche or full-fat sour cream (7oz; 3/4 cup+1 Tbsp), mine was 25% fat
  • 2 eggs room temperature
  • 150 grams granulated sugar (3/4 cup)
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 200C (400F).
  • Roughly chop the dark chocolate if you do not use chocolate chips.
  • In a bowl, mix flour, soda, and salt.
  • In a separate bowl mix butter and both sugars until creamy, about 3-4 minutes, add in egg and vanilla, whisk to incorporate.
  • Add in dry ingredients and mix quickly to form a dough. Add in the chopped chocolate (reserving some for garnish) mix quickly until the chocolate has spread evenly into the batter. Set aside while you prepare a filling
  • Mix cream cheese, sour cream or creme fraiche, eggs, sugar, and vanilla until incorporated and smooth.
  • Cover the bottom of the 33x23cm (13x9) baking pan with parchment paper. Spread 2/3 of cookie dough evenly on the bottom of the pan. Pour cream cheese filling and crumble the rest of the dough over cheese filling. Sprinkle reserved chocolate chunks/chips over the dough.
  • Bake around 30-40 minutes, until it has a nice golden brown color.
  • Let it cool completely in the refrigerator before cutting it into pieces and serve.
