This is one of the recipes I made on a weekly basis while I was in the third trimester. It was a perfect dessert to satisfy my crazy-late-pregnancy-sweet-tooth. It is a super simple, it can be made and tossed in the oven in just a few minutes.
Apple desserts are one of my favorites. Apples are very rewarding fruit, first, the are available all year round, they are inexpensive, can be thrown in any kind of desserts and those desserts are always a huge hit within my family. The only downside is that they are on a dirty dozen list, actually the first fruit on that list, but I have my own little orchard in my backyard and my apples are not treated with any kind of pesticide.

Ingredients
Topping:
- 60 grams all-purpose flour (1/2 cup)r
- 75 grams old fashioned oats (3/4 cup)
- 115 grams cold butter (1 stick, 1/2 cup) diced into small cubes
- 100 grams light brown sugar (1/2 cup)
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
Apples:
- 5 apples peeled, cored, and thinly sliced (I use a variety of apples - Granny Smith, Golden Delicious, Gala...)
- 2 tablespoon melted butter
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- pinch of salt
- 2 tablespoons cornstarch
- 50 grams brown sugar (1/4 cup)
Instructions
- Preheat oven to 190 C ( 375 F).
- In a large bowl, mix together flour, oats, brown sugar, salt, and sugar. Add diced butter and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In a large bowl toss apples with sugar, lemon juice, cinnamon, melted butter, salt, and flour. Transfer to a 20x20 cm (8x8 inch) or any other similar size baking dish, and sprinkle with topping mixture.
- Bake until the top is golden and apples are tender when tested with a toothpick, about 30-35 minutes.
- Serve warm topped with vanilla ice cream.
